Check out getkombucha.com. He helped me get started and I now drink K-T that is very fizzy, tastes like soda.
Basics:
Boil pint for about 10-15 minutes, while adding 1 cup Sugar and about 5-8 tea bags, (mix of specific black and green teas)
mix into 3 other pints of purified water, (for the fast cooling technique, otherwise boil all 4 pints and let cool for hours until room temp.)
Let it ferment with SCOBY for about 3-7 days or so, (depending on temp.)
-it will take some practice, but you'll know it's ready f or bottling when it tastes a little sweet, but you can taste the vinegar.
Bottle it with your favorite flavors. I found that using fruit juice concentrate is very good. Also, craisins, ginger, raisins, pure', etc.
Let it ferment in the bottle for another few days. I usually go between 6-9 days. You'll have to play with it. The extra bottle time ferment will create the carbonation.
