In order to preserve freshness by means of a vacuum seal, you'll need a two-part lid system, like this...

Bascially, the lid has two parts: a plate and a ring. You slightly over-fill the juice, put the plate on, some juice will spill-over (indication of a seal!), and screw the ring to secure the plate to the jar. Voila, you now have as vacuum seal (well almost...)
