I just found out more about Eggs, and it seems they are not that bad. I was going to edit my post but saw yours and wanted to comment.
One of the many advocates of a mainly plant based (not neccesarily 100% vegan) diet is Dr Fuhrman, and he has this to say about eggs,
"If you choose a limited amount of animal products to be included in your family’s diet, I favor eggs over fish or dairy, because of the potential for transmission of chemicals, mercury, and PCBs in the fish and dairy. Eggs, because they are virtually pollution-free, would be favored choice over other animal products to add to an otherwise vegan diet."
I also agree with you that a vegan diet is very hard to follow. Vitamin B12 for example (and that's in eggs) is apparently bacteria on plants, but now we have to wash our veg because of pesticides. And then there's omega 3 oils. But the benefits - if you get it right - do seem to be greater longevity, Calorie restriction may help a little there too, if longevity was your aim.
Weston Price was a great guy, but my opinion of the Weston Price Foundation is not so high, Many many doctors and researchers disagree with their findings. I looked into just one bit of research and found the researcher seemed to be twisting around the results of an article in the Lancet. My post on that is here. The researcher died age 41 from a stroke or something, so I don't think diet helped him very much.
Others too who post here support the Weston Price Foundation. I need to look at them more, but on some things it either means that they are right and lots of doctors are wrong, or vice versa. It just doesn't sqare up.
Anyway I think a healthy diet is mainly plant based with posibly some meat, fish and eggs, but no processed foods. See also www.processedpeople.com.
And having read what I have read on eggs, I think they are OK too, preferably free range organic. I think grass fed beef and non farmed fish are OK too in limited quantities, but the main problem is pollutants.
