Welllllll, they're not raw and they're not 'juice' :( but beets are very good for the liver :)
Pickle some "not cooked beets " by slicing them thin, adding equal parts apple cider vinegar and natural Sugar (I use sucanat, but dehydrated Sugar cane juice works) - and throw in a sliced onion, several cloves of crushed garlic...and if you like the pickling spices, some of those.
Put 'em in a big glass jar for a week before eating them (if you can wait that long) - wallah! Raw pickled beets :)

P.S. And when you're back to eating eggs? Boil some eggs, peel 'em, and when you're done eating all the beets out of the jar, put the eggs in with the juice - and let them sit a week. Pickled eggs! :)
