I asked Uny a similar question regarding the relationship % alcohol to food/juice ratio and absorption rate:

p.s. I was really stunt to find out on "Food Detective" and "Popular Science" that "cooking" alcohol does not reduce much of it. It depends on how you cook it and what you cook it with. Nevertheless, changing the alchohol-to-liquid ratio would definitely change the absorption rate.
