Tonics are often aged for a length of time.This gives the medium the ability to draw more of the herbal goodies out.As well as let the cultures proliferate to enhance the strength and quality of the product in question.The down side is the taste tends to get stronger with time and can lead to palatability issues.I plan to add some fresh ginger root with my next batch.
