When on a vegetetarian diet, one must know exactly what they are doing, where to get their protein sources.  Otherwise, your health will be affected, and sometimes severly.  Organic fish and chicken will be an excellent addition to your diet, but still eat as much raw as possible.  80% raw, 20% cooked is a good ratio.  Gluten sensitivity can be a very difficult thing to deal with.  Is your doctor holistic?  If not, I would find a doctor of naturopathy to help you with the proper diet and supplements.
