This is a very good tip. Exposure to air makes a world of difference. Bacteria will develop either way, but the aerobic bacteria from air are different than those developing in a sealed environment.
Do you know why fermentation takes place and what happens if there's no airing, as in a sealed bottle?
It would be interesting to learn more about this.
What exactly do you use to close up the bottle without sealing it?
