Well, I have a copy of Eat for Health, and there are a couple of references to gas in that. Fuhrman says if beans give you gas or make you feel bloated it would helps if you chew them very well. He says it takes time to get used to them, and you can try smaller portions and build up.
He also suggests replacing some whole, raw and cooked fruit and vegetables with blended dishes or juices.
You two should get this book, it's really really good!!

Me, I am not having so many problems because I do normally eat lots of fresh and raw fruit and veggies, but the beans did catch me out a bit for sure. No bloating or major problems though. Just had sprouts and broccoli. I hope microwaving for three minutes is as good as steaming, because that's what I did.

I just noticed, Fuhrman also mentions this a few paras from the end of chapter 8 in Eat to Live.
He says some physical changes may initially discourage you, and various things may result in increased gas, headaches, fatigue, and other withdrawal symptoms. He says this is temporary and rarely last longer than a week. He also says the high volume of food and high nutrient content of that food will help prevent long term cravings.
