I can't answer your question about substituting Canola for Olive oil.
I used to think Canola Oil was a good oil. I have now read enough negative stuff on Canola oil that it is now banned from my body. Below is an article on Canola oil that might be of interest to you. I know someone that runs a health food store and does not stock it anymore.

Canola and Soy Oil

When ,"Mad Cow Disease" was at its peak in England a television news report told people not to panic if they had been using canola oil in their diet and were over 65 years of age.

They were told the effects of any canola oil they had ingested would take a minimum of ten years to manifest. Most of them knew that in all likelihood, being seventy-five or older, they would be dead anyway. Nothing to worry about.

The authorities diagnosed the animal's behavior brought about by "Mad Cow Disease" as a viral disease. However, when canola oil was removed from animal feed the "viral disease" disappeared.

Farmers in America, with the blessings of government watchdog, agencies grow rapeseed, a weed in the mustard family. Manufacturers use its oil in thousands of processed foods. Canola is a coined word listed in only recent reference sources. Disguised under the name of canola oil, rape seed oil was introduced to America as a health product. The most toxic of all food-oil plants, insects will not eat rape as it is a deadly poisonous weed. The oil from rape seed is a hundred times more toxic than the other toxic oil sold as a health product; soy oil.

A semidrying oil, canola is used as a lubricant in fuel, soap, synthetic rubber base, and as an illuminant for the slick color pages in magazines.

Canola is an industrial oil; it does not belong in the body! Forming latex like substances that agglutinate red blood corpuscles, as does soy, but more pronounced, canola oil has destructive characteristics and effects on living systems. Loss of vision is a known side effect of rape oil which antagonizes the central and peripheral nervous systems, again, similar to soy oil but worse. The deterioration, however, takes years. Believed to cause emphysema, respiratory distress, anemia, constipation, irritability, and blindness in animals and humans, rape oil was widely mixed in animal feeds in England and Europe between 1986 and 1991 until it was widely reported that cows, pigs and sheep went blind, lost their minds, attacked people and had to be shot; Finally, it was thrown out.

Officially, canola oil is known as "LEAR" 6il; Low Erucic Acid Rape. Industry "experts" claim that although developed from the rape seed, through genetic engineering, i.e. irradiation, it is no logger rape seed, put "canola" instead.

The food industry talks about canola's qualities - its unsaturated structure (Omega 3, 6, 12), its wonderful digestibility and its fatty acid makeup. While turning us against naturally saturated oils and fats they come to the rescue with canola oil. They even tell us how Asia has embraced canola due to its distinctive flavor. Is this how internationalist brokers "help" third-world peoples? Somewhat like the introduction of the convenient timesaving microwave oven.

Rape seed oil's alternative name provided a perfect cover for commercial interests seeking to make billions in the United States. If you look al the ingredients listed on peanut butter labels you will see that peanut oil has been removed and replaced with rape oil (canola).

Rape oil is the source of the infamous chemical warfare agent mustard gas, which was banned after blistering the lungs and skin of solders and civilians, in WW1. Recent reports indicate it was again used during the Gulf War. Why?

Between 1950 and 1953, white mustard (rape) seed was irradiated in Sweden, increase seed production and oil content. Irradiation. is the process used i0 make our food 'safe" to eat. Genetically engineered fruits and vegetables are an example of man's misuses of technology and abuse of public trust by powerful interests and "head-in-the- sand" watchdog agencies.

Canola oil contains large amounts of cyanide containing compounds. Cyanide inhibits production of the energy molecule that fuels the mitochondria, which powers the body and keeps us-healthy and young. Many substances called inhibitors actually bind metabolic enzymes and block the enzymes activity in the body.

Toxic substances in canola and soy oils encourage the formation of molecules with covalent bonds which cannot be broken by the body. Once having formed they are normally irreversible. For example; the pesticide malathion binds' to the active site of the enzyme acetylcholinesterase and stops this enzyme from doing its job of dividing acetylcholine into choline and acetate.

Acetylcholine is critical to nerve-impulse transmission. When acetyl-cholinesterase is inhibited, as by pesticide residues, nerve fibers cannot function normally. It's similar to when a garage door opener's signal is not received; the door does not open. In this case, the hand or leg ordered by the brain to move, does not respond. In this era of advanced medical knowledge there has been, not less disease but a tremendous increase in disorders like systemic lupus, multi. pie sclerosis, cerebral palsy, myelinoma, pulmonary hypertension :and neuropathy. Soy oil, canola oil, and many insecticides contribute to the disfunction causing these conditions. Canola oil again does this more severely than soy.

Acetylcholinesterase inhibitors cause paralysis of the striated' skeletal muscles and spasms of the respiratory system. That' is why malathion, a widely used insecticide made up of organophosphorus compounds, is the pesticide of choice; killing Insects by paralysis it inhibits the insects enzymes. It does the same to humans. Used in Vietnam to defoliate jungle cover, Agents Orange, and Blue, are also organophosphorus compounds.

Many Vietnam veterans and Vietnamese people have had first hand experience with Agents Orange and Blue. Government experts who okayed their use, and the chemical companies who manufactured them have owned up to their knowledge of the toxic effects on people and the environment. Nonetheless, academia and government continue in their attempt to brainwash us with stories of "safe" Science and comparatively cheap food through the use of such poisons.

For years it was believed that glaucoma, a disease involving deterioration of the optic nerve results from fluid-pressure buildup in the eye causing the optic nerve to deteriorate. Now we know glaucoma is caused by a deficiency of oxygen, and blood flow, due to clumping together of the red blood cells and waste buildup in the cells and intercellular fluids.

These blood-corpuscle clusters, unable to squeeze through the extremely tiny capillaries in the posterior of the eye, cannot deliver oxygen to the mitochondria. If people continue ingesting canola and soy oils, a lot more will experience vision irregularities - like retinitis and macula lutea degeneration.

Death of the mitochondria in the cells in back of the eyes is due to oxygen starvation, sodium toxicity and waste accumulation. When the mitochondria die, the cells die, and the posterior eye tissues atrophy. In this respect, glaucoma, hair loss, Alzheimer's, multiple sclerosis, cerebral palsy and heating problems have much in common.

These debilitating conditions can be reversed.' Biologically friendly water and fresh' viable food are basic to rejuvenation. Detoxification of tissues and 'body fluids is accomplished with yucca extract, kombucha tea, blue-green algae and colon therapy.

Canola oil is also high in glycosides. Glycosides interfere with the biochemistry of humans and animals. They cause serious problems by blocking enzyme function thereby depriving us of our life force. Their presence in rattlesnake venom inhibits muscle enzymes and causes instant immobilization of the victim.

HIV and AIDS depress the immune system. So do soy and canola oils.
