She means to ferment it for that long. The reason is so all lactose is fermented and none remains in the yogurt. Some people, like myself don't tolerate lactose (I burp like crazy). I originally heard of this concept from Elaine Gotchell from the Specific Carbohydrate Diet. How she determined 24 hours was needed to ferment all the lactose I do not know.
