Sides: dried fruits and nuts are delish
apples, oranges, pears, fantastic.
one cooked potato
one or two mayo packs (or pack your own in a baggie if can refrigerate when you get to work/school)
one can of tuna in water or a hard boiled egg
when ready to eat: mash potato, add mayo and tuna (or egg) mash again, sprinkle w/salt & pepper. Yummmm
soups are a mainstay, if you can handle using a thermos.
HOT broth plus:
fresh thin sliced veggies
or
herbs and some chicken
or
one egg - scramble (broth will cook the egg)= egg drop soup.
or:
hot sauce, lemon and mushrooms or sliced escarole
or:
make the soup at home and just have a real treat when ready to eat.
salad greens in a baggie will keep well for a few hours
a lemon or a small container w/dressing
mix before eating
you can add dried fruits and nuts (YUMMM)
and maybe some canned salmon (double yummm) definitely w/lemon and Sea Salt
--
Fruit salad (always add a bit of fresh lemon juice to preserve); probiotic yogurt;
Keep dressings separate until ready to eat to avoid mushy or wilted foods.
When applicable, use vinegar or fresh lemon juice and Sea Salt to season. These help to prolong or preserve prepared foods.
lastly: spices are your friends. Experiment and see what you love.
I hope you get lots of posts.
I do a lot of things but I am very open to flavors, and have access to fridge and electric at work...
Have fun and please post your findings, I would love to try some new things...
