Your beets sound really small. I partially agree with your husband. I've seen/used some BIG whopping beets before, and different sizes between. Some can be a good 6-8 inches diameter. So, I would consider a 2 inch beet a small one and just toss in the whole thing. Maybe even one per person. This whole thing kinda depends on where you are healthwise and what you can tolerate. I remember my cousin telling me how cleansing beets are, but I can drink 16 oz of juice, probably 8 oz of which is beet, and I just don't feel the difference! But I'm in pretty good health. So if you guzzled that much beet then I guess you don't have to be as cautious as others. I mean, none of that "1/4 a beet per person". Sounds like you can handle 1 small beet person, or 1/2 a big beet.
