Don't peel carrots! A lot of the nutrients are near the skin. If they're organic just clean them with water. If they're not organic, scrub them lightly with a fruit/veggie brush under water, and cut the stem off at the top (that's where the pesticides are). If you can't afford organic ones, maybe you can rotate - 3 weeks regular, 1 week organic.
