I'm intrigued... We have Dr. Neil Barnard's book about reversing diabetes and he says the key is a totally vegan diet. I haven't read far enough yet to see if he recommends a lifelong change or 30 days. If it's just 30 days, I think my husband and I will manage just fine.
Some food suggestions---Boca burgers---they taste similar to the real thing. Also, he says in the book pasta and rice dishes are ok as long as there is no meat, fish, dairy products or eggs in them. I have a couple of vegan recipies that I make from time to time. One is a couscous dish with spices and vegetables. Another is a bok choy dish with onions and tofu. If you have a store such as Whole Foods near you, stop by there and look around. They have a lot of vegan offerings---not to mention a great produce section. In fact, I'm planning on going to my nearest one today and have a look. Also, do a google search on vegan recipies or go to a good book store and check out the cookbooks. However, what I've found that some vegan cookbook authors don't seem to know the meaning of simplicity---many of the recipies are full of long, drawn-out procedures.
