I've used coconut oil in recipe where you creme the butter, it works just fine. It can be subsituted for butter, oil, or lard. Made oatmeal spice cookies with evco the other day, and that was all I ate the whole day. Checked my blood sugar, before dinner and it was 84. Of course I was working on the garden all day.
