I am totally for a gluten and lactose free diet. I could not,or would not go back to what I was eating before. The memory of complaints I had is still fresh in my mind and I do not want to go there. With my eating habits now,thanks to the gluten free diet,has made me realise the amount of wheat etc food companies put in their products. They do this because it is a cheap and stable product. I have been forced I guess to eat a lot more healthier and have seen the benefits. I eat a lot of salads,fresh fruit, meat and drink a lot of water.Also being a Chef I am very aware of what foods are basically good for you,in moderation. With candida it can be hard to pinpoint the main culprit. Yeast is also in a lot of our foods as well. Personally I would opt for a process of elimination. I know that this would be a hard start to begin with but start with a diary of all foods that you would consume on a daily basis. From there eliminate the foods that are causing these problems.I do not think that this would be easy for you.I presume you have an idea already of the what things to avoid. I do put a lot of faith in UT and can only assume that it will eventually get rid of candida for you. The more you use UT the healthier the body would become. Have you tried to see an iridologist/naturalist? They are pretty good at finding the problems out for you as well. There are also good doctors around but from my experience I just seemed to be put on the gravy train of seeing specialist after specialist.Most chemist/health shops these days will have books etc for sale regarding ailments and how to avoid them. With the age and illness of the person,time is the underlying factor in the body recovering; but keep up the UT, it is your own bodies medicine and can only benefit you in the long term. I do eat chocolate, which I can stomach now as it takes 2 years for the body to recover from lactose problems.The celiac part is from the Irish heritage and can skip generations or siblings.
