And then, of course, do watcha usually do with the carcass. I do the same thing! :)
Also use the gizzards in the broth...
I was getting some beautiful beef marrow bones from my HFS last winter. My gawd that stock was amazing. I'll periodically measure my pH, bone broth brings it up instantly.
