This week's refreshing smoothie recipe can be whirled together in less than a minute. In addition, one cup of sliced honeydew provides an excellent source of vitamin C. According to AICR experts, foods containing vitamin C probably decrease risk for esophageal cancer. 3 cups cubed honeydew melon Combine all ingredients in blender or food processor and puree until smooth. Pour into 4 chilled glasses and garnish with addition mint, if desired. Makes 4 servings.
