It's unlikely that she would have PCOS and then PCOS disappear.
Let's take the facts as you spell them out:
Your wife
* did competitive skating when she was young
* had irregular periods when she was younger
that tends to suggest that her natural hormonal balance would have been low in estrogen and high in testosterone when she was younger.
* she went on the Birth Control Pill and her periods became regular. That's what one might expect with the artificial increase in estrogen
* she has female relatives who have obvious facial hair of which you're aware
* she has coarse facial hair, though not as thick as yours.
There are a number of points you don't give information on, such as
* How old is your wife now?
* Has she had children?
* When did her beard growth start?
* If she shaves it, how often does she shave? Daily? Twice a week? Once a week? Once a month?
It's worth remembering that when it comes to facial hair, there's a very considerable overlap between men and women and many women have beard growth as heavy as most males.
