Hi Friday,
The minute the Dr. called and told me celiac had been found in a biopsy in an endoscopy (not looking for that specifically, it was prior to gallbladder surgery) something clicked in my mind that I would do whatever it took in order to feel better, even if that meant cutting out foods I had always enjoyed. It's definetly not easy, especially smelling it cooking, cooking it for others, and watching them eating it...and eating out can be very challenging.

I think when a person has gotten to the point of being sick and tired of being sick and tired, you'll find an inner strength and determination that might surprise yourself-- and the temptation for the foods you wish you could be eating will lessen....well--I grew up with a full blooded Italian G- grandmother, and for sure not having the Italian pasta is the hardest thing. Rice pasta just isn't the same.

I was just talking to Telman on the Liver Flush Forum about this- it can take quite a few months even after going off the gluten for the healing to take place...and watching for hidden gluten can be hard, it's in the glue on envelopes that you lick, it can be in toothpaste etc.

But, the good news is- you can find alot of gluten free foods available now. Not easy, but the hardest part is making up your mind that if that's what it takes to feel better, that's what you'll do. Having supportive people around you definetly helps.
