I've skimmed through a few studies about heated fermented products having an effect against infections, EM included.

You might be interested in rabbit's digestion, if you don't already know. Basically they eat their foods twice; the second time, the food is in a fermented and very assimilable form. Kind of an alternative for an animal too small to have a huge rumen.

The whole thing about fermentation and its benefits is mysterious.
