I was in a situation sort of like this before.
Except I was HER.
I had come off a really bad relationship and was seeing
a guy, and I told him many many times I wasn't looking to be
in love and have anything serious.

Well he fell in love anyway and got hurt pretty bad.
I didn't want it that way but thats what happened and
what seems like is happening here.

I think you should back off. A lot. She has been honest
that she isn't ready and trust me when I say any sort of pressure
from you (even if you don't mean to pressure, to her, you just
showing her love might feel like pressure because she
may feel obligated to give something she doesn't have in return)
will freak her out even more.

She really needs to spend some alone time and heal, and you
need to do your own thing until you meet someone who is ready
to have the type of relationship you want.

Just my 2 cents, I hope it works out for you, you seem like
a real nice person. <3
