I think meat and veggies sound good to start.
From everything I've read so far, I think that veggies are more difficult to digest than fruit, but if you haven't eaten them all day and then you eat them first, you should have a good amount of bile stored up to break them down. If you just want to be sure you get all the vitamins you need, you could juice some greens or drink a superfood supplement.
For meat, from what I read, you should try to get organic grassfed or free-range animals. Aside from the ethical and pesticide arguements, grain-fed animals have a severely distorted balance of omega6: omega3 fatty acids. According to some "experts", this plays a big role in human health/longevity. Whereas you can't believe everything you read, I do believe in the "try it and see for yourself" philosophy. I don't eat a lot of meat, but I try to get some omega3's whenever I eat something with a lot of omega6's. For example, I grind some flax seeds in a coffee grinder and mix them in with my sesame milk shakes (sesame is almost all omega6), or I soak some chia seeds and "drink" them down with a little Sea Salt and cayenne. I have been felling better this week since I have changed my diet to include more raw and more omega3, so I think I'm doing something right.
Yes, I was told that gestational diabetes does predispose the child to a higher risk of type 2 diabetes later in life. I will have to be sure to remember to tell my son this (and even my daughter, though I tested negative for gb with her) when he is old enough to understand.
