I eat raw egg yolks myself. They of course, must be organic and free-range. You can read more about eating raw egg yolks on mercola.com--just do a search. He says the risk of contamination for salmonella is only 1 in 30,000. That risk is virtually nil if consuming organic and free-range yolks.
