I'm vegan , so all proteins present come from the vegetables and grains. What's the role of the proteins?

And: is the theory of live food confirmed when using a ph balance criterium?
Of course it all depends on the quality of the vegetables, etc., but let's say I eat them cooked (wisely cooked) and my husband eats them raw, will my husband end up more alkaline than me or not (same quality of vegetables)? in other terms, would you say cooked vegetables are acidic, or more acidic than raw ones? other terms, does the theory of ph balance convalidate the theory of live food?
