Animal fat is healthy. I don't know about the "cover" fat (the fat just underskin?), maybe there's some strange reason to not use it. I know the american indians ate a lot of suet, which is fat around the kidneys (the article states otherwise...).
Sea scavengers are very good at what they do. If shrimps were to become that toxic, they would die. They're just like one big extremely efficient liver.
The article mentions olive oil, I want to mention macadamia oil which has not only all the benefits of the oleic acid from olive oil but it is also the oil with the largest amount of palmitoleic acid, another antimicrobial fat. It is also lower in omega 6s.
The stuff about never eating meat with lifeblood is a matter of preservation. That's why carcasses are hung so that all blood is removed.
The red liquid when you handle meat is water and myoglobin.
