I think you're incorrect. Organic farming methods have dwindled with the need to produce mass crops for momentary reasons (industrialization/commercialization, etc). When you do that, old methods that re-mineralize soil go bye bye.
My belief is: There is plenty of essential minerals in the ground, but the farming methods degraded over time such that nutrients did not "melt" back into the soil.
I'm not really debating you (although we can if you like); I'm just offering some counter theories and opinions on why mineral depletion occurred in the so-called goiter belt. My contention is deficiency occurred in the crops not the soil.
