wouldnt raising your own yeast be the same as sourdough? i lived in alaska for 26 years and at one time we had a sourdough starter that descended from a batch that came over the chilkoot trail during the gold rush at the turn of the last century. it made the best tasting bread i have ever eaten. i miss bread.
