this is what i would do if i were you. First get a high quality spore based probiotic. Most people in your condition find probiotics are worthless because the bacteria die before reaching the problem area. Spore based probiotics dont do that, the outer spore protects the bacteria from the acidic conditions of the stomach until it reaches the intestinal track. you NEED the bacteria, that is what will digest your food and heal your bowels.
you can get a multiple strain (more than one species of bacteria) spore based probiotic product called syntol. however, its an expensive product. you can also get a single strain spore based probiotic for much cheaper like Lactobacillus sporogenes. there is a recent thread on the probiotic forum you might look at on this subject.
the next thing i would do is get some organic eggs and then track down some RAW organic milk and cream. those will save you. raw eggs are the easiest thing to digest in the world and are chock full of fat, protein and amino acids. raw milk is teeming with enzymes and is a totally different product than store bought milk. you can ferment the raw milk by leaving it sitting out in an area with about an 80 - 90 degree temperature for a day or two. the natural bacteria in the milk will ferment the milk, and it will create a super healthy product for you.
a staple food for you would be a shake made with raw eggs, raw cream or milk, raw honey, and then some flavoring like cinnamon, vanilla, salt or whatever. take some probiotics with this shake. it will go down real easy and be very nutritions and energizing.
you may also want to look into naturally fermented vegetable product line by a company called rejuvenative foods based in santa cruz. The products must be refrigerated, so you have to order it through your local health food store.
There is also someone named sheldon who posts on the colitis forum who recommends using vitamin e enamas for this condition. You might want to check into that.
