Currently I use...

Bulk tea...

1 tablespoon Nilgiri... a very good black tea

3 tablespoons Japanese Sencha or Bancha... My favorite green teas; I have also used Chung Mee

1 cup of raw turbinado Sugar to a gallon

And my culture...

I like any of the above teas used alone, however when on a whim, I mixed them, I discovered something special... at least for me.

I think I got the idea for using Sencha, Bancha, and Chung Mee from this site a long time ago... I do not remember using anything else since I started other than playing with lipton or luzianne on a whim for a batch or two.

One of these days, I may try Guayaki Yerba Matte.
