You have a point...

If you have read any one of various studies on mineral depletion in food that included tree fruit, you will find that although the mineral depletion in tree fruits has also declined (double digits; for the most part 10 - 20+% range) since the 1940s, it has not declined nearly as much as vegetable and grain crops which have declined in mineral value as much as 75% in some cases.

There are several reasons for this, including the various plants/trees root systems, harvesting techniques, use of NPK and other fertilizers and pesticides that cause mineral imbalances (just like supplements and toxins can do to us) in the plants, etc.

I suspect where we see mineral depletion in tree fruit, especially with the older trees, it has more to do with a declining air quality and pollution, that may also inhibit some light waves from being used as efficiently by the plants, and perhaps soil stewardship, or lack thereof.

Some reading I have done, indicates that plants do pull some of their mineral/element value from the air, including iodine. It is rather fascinating stuff.
