Sometimes - I believe - Endocrine malfunction (thyroid, hormonal swings) may cause voice changes. Might that be possible? (Especially since you mention panic attacks as well)

However, giving up smoking is always an invaluable gift to yourself.

If you have recently stopped smoking, your body may be attempting to heal - that may also cause a worsening of matters before getting well. So that may also be a reason for the voice change. And, you may also get a terrible cold or flu-like and cough: lung clean up.

Good going on kicking the habit!
