Hi Suzi - sorry for the delay in responding.
It took me I think about 8 - 10 minths in all, although I did start to notice changes after maybe 2 or 3 if my memory serves me correctly. As to diet - I'm also vegetarian, and I eat mainly vegetables, some beans, nuts, seeds, eggs & occasional sheeps or goats cheese. I keep grains to a minimum, avoiding wheat altogether (intolerant), and having occasional brown rice, buckwheat or quinoa (although the latter two aren't really grains). I still have my one cup of black tea in the morning with rice milk, and herbal teas throughout the rest of the day. I don't really drink alcohol, occasional glass of champagne on a special occasion. I don't really restrict my intake of beans or nuts any more, I gradually increased them back to having one or the other every day with no ill effects, so like I said before, I don't really think that those foods would pose much of a problem by themselves - whole foods tend to come with the balance of nutrients in them that are necessary for the body to use them effectively without causing a problem. If you were reducing things like this it would probably only be necessary in the short term.
