Unripened fruit is lacking in carbohydrates not minerals. A ripe fruit has the fruit sugars necessary to feed the sprouting seeds until they get established with a good root system and leaves for photosynthesis according to the true working of nature before man started planting the bare seed. Even the seed contain enough nutrients to feed the embryonic plant before it sprouts.
Most unripe fruits are more alkaline before they are ripe. Some are so alkaline they cannot be eaten, like persimmons. Others can give you diarrhea, ever heard of the green apple trots? Most of today's hybrid fruits will safely ripen once picked. They were bred that way so commercial fruits could be shipped. Tree ripened usually tastes best, but once a fruit is sweet enough to eat, it can be picked with little loss of nutrients.
