Sure...I eat mostly greens and fruit, I guess. I usually don't have breakfast, but if I want something, I have a banana/something smoothie...usually banana/mango, or banana/orange, or banana and greens. Lunch is usually a big (and I mean big) kale or greens salad...basically just some kind of greens, with chopped up cukes and onions and bell peppers and all the other veggie salad things that I like, on it. I use olive oil as dressing, or maybe a squeezed orange. Sometimes I make dressing with avocado and ginger and lemon...whatever. Sometimes I have flax seed crackers with that...I make them in my dehydrator. If I haven't eaten breakfast that day though, lunch is fruit. I might eat, like...3 bananas and 2 mangos if I'm really hungry. I make "pudding" with them; I peel them and chop them up and put them in a blender with a little ice, and then eat it. That's really good! Makes a quick dessert for dinner, too.
For dinner I have more salad, or hummus and celery (one of my favs) or sometimes I make zucchini lasagne (my recipe is in the Raw Forum here). Sometimes I love 'burritos"...I take avo and mash it up with lemon and salt and pepper, and smear it on romaine leaves, and then chop up tomatoes and onions and corn and put some on each leaf, and roll it up and eat it. It's really delicious! I also eat a lot of what's called "blended salads", which basically means you make soup out of your salad ;) My favorite is an avocado, half a zucchini, some dulse (seaweed) and some greens. You stuff it all in a blender and put some water in it, puree it, and eat it. That's probably my favorite thing right now. Some people call that "Energy Soup".
I don't usually eat nuts on my own, but there's a health food store and a raw cafe/take-out place near me, and both sell raw take-out, so I can buy raw pizza, carob mousse pie, sundried tomato hummus, falafel, nut pates, and a whole bunch of food that's really good. I buy that occasionally, and almost everything has nuts in it, so I do eat nuts that way. But at home I'm generally too lazy to make complicated "gourmet raw", and just like to keep it simple. I love eating this way!
And once in a while I have some sauteed mushrooms or a baked potato. When I go out to eat, if there's absolutely nothing else to order, and the salad looks pitiful, I will eat french fries. But that's once in a blue moon, and out of desperation.
