You're right to be concerned. What are your husband's goals with the water fast? How are his moods?

One thought that occurred to me is that he may have decided to do the Water Fast in a manic phase. If his mood turns, he could come off the fast badly and get sick.

Breaking a fast needs to be done carefully, to let the digestive system "wake up". If he grabs a donut, he'll be miserable. Even eating a sandwich is off-limits for several days after the fast. Perhaps you can talk to him about how he plans to break his fast when the time comes.

For your info, the key is to start with a non-fat nutritious liquid (like unsalted vegetable broth or diluted orange juice) for one day, then add steamed vegetables for another day. Don't eat low-water content foods until the 3rd day -- grains, rasins, etc. No fats or foods containing fat for several days -- no avocados, nuts, etc. When eating fat the first time, start slowly.

When he is again eating, consider supplementing his diet with Omega-3 fatty acids from fish oil. Molecularly distilled fish oil (pharmaceutical grade) has all toxins and mercury removed. Studies show it to be remarkably effective for bi-polar disorders.
