If your daughter is allergic to dairy take her off it for the time being. In time, with a clean diet, she might be able to tolerate raw dairy again. But never give your kids pasturized, homogenized dairy!
Regarding bread, what I've found is that because your climate is much warmer and more humid than others, the fermentation schedules are faster. Try doing a smaller batch and watch it closely. It may be that you can do in one or two days what takes others three days to accomplish.
I don't do much bread anymore so maybe someone with more experience can help you. Also, many of the sources where you get the raw milk may also sell other things like kefir, breads, whey, eggs, etc. Mine sells all that and more. Good luck!
