I found a website that sells soaked nuts. It's

Maybe this would be an alternative if you can't find a source of good nuts. I've just been buying packaged ones from my local Walmart. Maybe not the freshest, but I'm working with what I've got available and affordable. When you get the nut thing worked out, the Almond Cookies in the NT book are wonderful!
