Coconut kefir is made with the water inside young green coconuts (when there is more water due to coconut meat not yet being formed). Coconut milk is made by grating coconut adding milk to it and squeezing out the coconunt - very different.

You want the coconut water of young green coconuts (they are actually light tan in color). This liquid is packed with nutrients although it is a bit sweet. Turning it into kefir makes it a lemonade consistency and look drink with a fiz and a rather refreshing taste. I started drinking it to feel better, but I rather like the stuff. Tastes better than kefir and no dairy. Also, coconut kefir is easir to make - usually only take abou 1 1/2 days.
