Heres one for the vegans (Wrenn and company)... hearts of palm ceviche:
1cup chopped hearts of palm
1cup chopped tomatoes
1/2 diced onion (white)
1/4 bushel diced cilantro
15 diced green olives
4 squeezed lemon
2 1/2 tablespoons katchup
1 1/2 teaspoons garlic
salt to taste
cayenne pepper (optional for those who like to spice it up a little)
this is one of my favorites... oh, and if you feel adventuresome, ive had much better results with raw cheeses than any other form of milk products. The natural enzymes really help with the digestion.
