Here's a simple zucchini bread recipe.
1 1/2 cups unbleached wheat flour,
or whole wheat or spelt,
or any combination of
the above
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 tbls water
1 egg (optional)
1/3 cup pure vegetable oil
can use coconut oil or
butter
1 tsp vanilla
1/2 cup honey, or 1/4 tsp stevia plus 1/4 cup liquid sweetener
1 cup chopped or grated zucchini
1/4 cup chopped nuts (optional)
In a large bowl mix together flour, soda, salt, nutmet, and cinnamon. Add water, egg, oil, vanilla, and sweetener. Beat until thoroughly blended. If it's too thick, add a small amount of water. Stir in zucchini and nuts. Pour into a greased loaf pan or small, round layer cake pan. Bake for 50 to 55 minutes. Let cool in the pan. Oven, 350 degrees.
After you work with the recipe for awhile, you can change how you sweeten it if you want.
This corn bread is easy and delicious:
1 cup corn flour
1 cup whole wheat or spelt flour
4 sp baking powder
1/2 tsp salt
1-2 tbsp honey or maple syrup, depending on how sweet you want it
you can also use a little bit of watered down liquid
sweetener and then add little stevia
1 egg (optional)
1 cup milk or watered down coconut milk or rice milk
1/4 cup vegetable oil, coconut oil, or melted butter
Mix together all dry ingredients. Add sweetener, egg, milk, and shortening. Beat by hand or with electric mixer until smooth. It will be thick, but if it's too thick, add a little extra water. Bake for 20 to 25 minutes in at 400 degrees in a 9-inch round cake pan or greased muffin tin.
You might be able to make blueberry muffins or apple muffins with this recipe.
I'll post more recipes later. Maybe someone else will have tried and true recipes to add, also.
