Spelt Pasta
So, I'm finally in phase 3 (woohoo!). My question is this: yesterday I went to Mrs. Greens and saw two different types of Spelt pasta (Vitaspelt brand) -- dark colored and light colored. Since the pasta-starved Italian in me was desperate for an inkling of familiarity, I bought and cooked some of the light kind. And lo, it tasted just like real pasta. I flipped. It
is definitely spelt pasta, I looked over the box and frowned several times. No fine print saying that it's actually stuffed with polyunsaturated fats or anything. It seemed too good to be true.
Today, for variety's sake I bought some of the dark colored spelt pasta. Haven't tried it yet, but the ingredients look slightly...different. 5g of fiber instead of 2g. One gram less protein. Some other differences. I haven't made it yet, and I will regardless, but can I expect this type of spelt pasta to taste like that abysmal whole wheat stuff? And also, is it terribly wrong to eat the light colored spelt? I'm figuring I'll mix the light and dark for a balance.
