I'm so glad to see that you are embarking on a journey to better health and well being. How ever there's something that I want to point out to you. There is a major difference between a fast that is done for health reasons and fasts that are done for spiritual reasons. In the case of a spiritual fast, the only objective is to become closer to God by shutting out all of our own physical needs, which may even include intimacy with spouse with his/her consent for the time of the fast. There is nothing mystical about a spiritual fast on to the Lord, it is a way of focusing entirely on Him. There can be many outward manifestations resulting from our special time with God, such as cleansing our system, renewed vigor, renewed sense of God's purposes in our life, but again, these are not the main objectives, Jesus Christ is the main and only focus.
Of spiritual fasts, some fasts may include some food but no pleasurable foods, such as deserts and treats. Other fasts are done with just juice or water. It is never advisable to abstain from water for any length of time. Some people decide to fast T.V. or movies for a time, or some other form of activity which might be a major part of recreation in their lives. But always, the idea is to turn aside from everything else that competes with our attention on God. Spiritual fasting is done for our benefit and spiritual growth, not God's. Often times it will be the result of obedience as He calls us to a fast so that we may be receptive to His will for our lives without distractions.
As far as health fasts, Curezone is the place to come for help. There are a wide number of forums here dealing with the various different type of fasts. I'll give you the ones that immediately come to mind, although there might be others hanging around that I can't think of right at the moment:
