I think I remember some of my college chemistry and I believe it has to do with the negative ions and the body’s electrical response to them. Opposites attract so a negative ion will help alkalize by neutralizing a positive ion or acid.

I believe this discussion could go further into oxidation, anti-oxidants, toxins etc. As they all act or react due to negative or positive charges.
