The key is the actions or end product. Animal products give rise to acid. Fruits even acid tasting ones like lemon produce bases or alkaline. Fruits should therefore predominate. Protein foods decomposes and oxidizes into sulfuric, phosphoric uric, etc.... acids. ACV is acidic in taste but alkaline forming.
It is a given that most people are acidic from not understanding this thus the rationality of neutralizing these conditions with foods such as lemon or ACV.
