Because it is such a fresh crop or food to use, it must have enough Alkaline minerals used to grow it and should be used fresh or you are correct, there will be a mold problem.

And this mold problem is because of to much nitrogen in ratio the Alkaline minerals or it may occur from the rapid break down if picked and let sit and start to decay!!
