I'm a former ranch lover myself, don't care much for oil and vinegar. So I came up with this recipe. Not quite the same as ranch, but creamy and a little spicy.
Clove of garlic (or less)
Drop or two of honey or agave
Quality olive oil
I grind up the almonds first, then add about twice as much of the pine nuts, a clove of garlic, a bit of lemon juice, pinch of salt, few grinds of pepper, a tiny bit of sweetener, water, then blend thoroughly (I have a 'Magic Bullet' blender). I add a tablespoon or two of really good tasting olive oil to make it creamy, then blend again. It will thicken more in the refrigerator. Experiment with any other fresh or dried herbs you enjoy, like parsley, basil, oregano, chives, etc... I use dried habenero powder, but not everyone likes that!
