Vegetarian suddenly hit by fruits and vegetables intolerance

I have been a vegetarian for many years, no allergies to anything, healthy and active lifestyle. All of sudden I noticed that after intakes of vegetables or fruits I have a change in bowel habits, excess gazes, farting, rumbling in the stomach. And not just after some vegetables and fruits but all and each of them raw or cooked. I was surprised but it was still manageable - I reduced portions, avoided some and hoped that one day it would go away. Never happened. After several months I’ve got also severe dermatitis on fingers. The list of fruits and vegetables causing my problems are growing and now it includes even coffee that I used to drink regularly. Allergy testing didn’t show any allergies at all, blood and stool tests are normal as well. I am out of ideas what to do now.
I’d greatly appreciate any suggestions
