I do agree that you have Candida and low good gut microbial flora.
You can certainly continue your plan and also introduce natural probiotics like Kefir, which has 56 different types of helpful microbium that will help you with gas and other digestive issues. Eliminate all form of sugars that includes alcohol.
I would also look up stomach acid test. If you have low stomach acid you could have this issue too.
